Photographing a fine dining restaurant that's illuminated by tungsten wall lights and a large glow from the ceiling shades can be very challenging. To overcome lighting issues attributed by this setup I added 3 flashes gelled to bring out the features of Deals. Click to view larger image.

Although I had decided on the best vantage point that shows the best side of Deals Restaurant, I experimented with this curvy perspective using a fisheye lens.

With some time to kill in between shooting the restaurant and food, I played with a wooden pepper shaker and a copy of Deals' menu to produce this piece to emphasize the hotel's fine dining restaurant.

Starter: Marinated red beet salad with goats cheese and sweet peas.

Starter: Pan fried lobster, slow cooked egg, muesli crumbs, cheddar emulsion.

Main course: Grilled Angus pure tenderloin, roast onion tart, horseradish cream.

Main course: Slow cooked chicken breast with citrus gnocchi and sweet dates. In Italian cooking, gnocchi are small dumplings made from potatoes, semolina, or flour.

Dessert: Raspberry parfait, pear and strawberry compote, nougat crumbs.

Dessert: Chiboust cream, almond crumbs, salt caramel, star anise poached fruits.

My wife and me are self-anointed foodies and are excited to try Deals restaurant.
We’ve had Radisson Hotel’s brunch in Brunei a few times and were very impressed with the selection of food, excellent coffees and service as well each and every instance.

Thank you very much Paul. I live an hour plus away from Radisson Hotel in oil town Seria and will be returning to the hotel to finish off a shoot. Look up Mr Peter Feran, the General Manager on your next visit. I’m sure he would love to hear from you seeing how quality dining is one of their biggest attraction.
Love the fisheye perspective. But the dessert! Wah! I just finished breakfast and I am salivating just by looking at them! I hope the calories don’t happen from looking!
